Weekend Recap + Weekly Meal Plan

I’m always looking for ideas of things to do on the weekends. Sometimes we have 999 plans and other times I am twiddling my thumbs while Raymond is out playing golf.

This past weekend was more of a work weekend with our estate sale on Friday and Saturday and then a fulllll day of church, lunch, grocery shopping, and planning onn Sunday.

I try to sneak in a little downtime on the weekends, but this time we were full pedal to the medal.

I thought it would be fun to recap our weekend and share our weekly meal plan with you.

FRIDAY

We were out the door early so we could arrive at the estate sale with plenty of time to finalize a few prices and greet our early-bird customers.

Fun fact about estate sales: on average, there’s anywhere between 5 and 35 people waiting for us to open the doors so they can be the first ones to shop. I love it as the liquidator but I always avoid that first rush as a shopper. We like to greet the early-birds, give them a number to indicate where they are in the line of who got there first (sometimes they leave for a coffee and then come back), and just chat with them about what they are looking for and why. I’m always intrigued with what people do with the things they buy from our sales.

Raymond handled the check out while I my job was to fill in the holes. We like to move things around as other items sell to make it still look shoppable and full! :)

We were hangry by the time we got home, so Raymond whipped up a batch of air fryer french fries and we loaded them down with crock pot chili and all the fixins! I took a nap after all the work and all the food but managed to squeeze in a quick trip to Goodwill before they closed. I found a few cute things, but was disappointed that the dressing rooms were closed. Given that their prices had gone up, I decided to put it all back and came home and put on my jams!

SATURDAY

While not as early as the day before, we were gearing up for a busy day! As our last day at the estate sale is always Clearance Day (50% off!) which always draws a crowd. Before we knew it, closing time had arrived so it was time to pack up our tables and supplies and head home.

I like to get my meal planning and grocery shopping done on Saturdays but we ran out of steam so pushing it to Sunday was our only option.

SUNDAY

We headed to church for morning worship and then straight to the grocery store for a week’s worth of groceries. We were in a slight hurry as Raymond’s mom and friend were on their way to have lunch at our house.

I did take some time to meander through the house plants at Lidl.

Raymond made flatbread for everyone, and nachos for me. He took a shot at plant-based pimento cheese in celebration of Masters’ Sunday and for the first trial run, it was really good!

Raymond spent his afternoon at the golf course while I got to enjoy the house all to myself. My Sunday to-do’s are usually laundry, plan the week, and meal prep. I did get some time outside as our yard is always the prettiest when the azaleas are in bloom!

WEEKLY MEAL PLAN

Monday: Southwest Salad

Tuesday: Tacos

Wednesday: Spaghetti & Meatballs w/salad

Thursday: Stuffed Peppers w/salad (we substitute Beyond Meat for the ground beef)

Friday: Loaded Taco Fries

Saturday: Cauliflower Parm w/salad

Sunday: whatever Raymond wants to make :P

We are loving the air fryer right now and I want to try a few new things this week like fried plantains, fried pickles, and fried brussel sprouts!
